Bussing Porch During Cocktail Hour
What is this task?
Placing empty glasses, appetizer plates, and used flatware in bus bins to be brought to the kitchen and sent through the dishwasher.
Why does this task matter?
The bar will run out of glasses and the porch gets cluttered with dirty glassware.

What do you need to do the task?
Bus bins
Step-By-Step
1. Find a bus tub under the dishwasher counter in the kitchen.
2. During Cocktail Hour, carry a bus tub to the Porch (or wherever Cocktail Hour is taking place).
3. Place empty glasses, appetizer plates, cans, and other garbage into bus tub.
4. Once bus tub is full, return to the bus tub to the kitchen.
5. Place an opaque pitcher from above the ice machine on the dishwasher counter.
6. Place a brown dish rack sitting above the dishwasher on the dishwasher counter.
7. Discard liquid, straws, and fruit from the glasses into the opaque pitcher on the dishwasher counter.
8. Throw away disposable plates, napkins, and flatware in the garbage.
9. Empty liquid from cans into the opaque pitcher and recycle the cans at the bar or in the Catering Hall garbage labeled "Cans".
10. Place the now empty glasses upside down on the brown dish rack.
11. Bring plastic wine glasses and copper mule mugs to the bar for the barback to hand wash.
12. Once the dish rack is full with dirty glasses, send the dish rack through the dishwasher (see "Running the Dishwasher").
13. Once the dishwasher cycle is complete, pull the dish rack out of the dishwasher and allow the glasses to cool slightly before handling, they will be hot.
14. Once glasses have cooled slightly, bring the dish rack to the bar.
15. At the bar, replace the glasses to their respected shelves. Do not overcrowd the shelves or glasses will fall off and shatter.
16. Return ribbed coupes to their respected shelf towards the back of the Dinnerware Closet
17. Once all the glasses have been replaced, bring the dish rack back to the kitchen.
18. Repeat until the Porch has been cleared from dirty glasses, disposable plates and flatware, and other garbage.
What does “done right” look like?
This task is finished when ALL the empty, dirty glassware and plates have been cleared from the Porch. Multiple trips may be required to clear all the empty/dirty glassware and plates.
All glassware is returned to their respected shelves behind the bar or in the Dinnerware Closet.
Common problems or mistakes?
Do not send plastic wine cups or copper mule mugs through the dishwasher.
Do not dump liquid from glassware into the dishwasher.
Do not overcrowd shelves when replacing glassware at the bar.
