Bussing the Main Hall During Dancing

What is this task?

Using a bus tub or the black, two tiered cart, to clear dinnerware, flatware, glassware, napkins, and other garbage during dancing to be brought back to the kitchen to run through the dishwasher.

Why does this task matter?

Dishpit and dishwasher will get backed up and become inefficient.

What do you need to do the task?

Bus tub

Step-By-Step

1. Once dancing begins after dinner, obtain a bus tub from under the dishwasher.

2. Put on disposable gloves, found under the kitchen island on the side closest to the ice machine.

3. Walk into the Main Hall, start at a table without any guests and begin placing dinnerware, flatware, napkins, empty glassware and other garbage in the bus tub. Leave water goblets at the tables.

4. Once the bus tub is full, return the bus tub to the kitchen.

5. Throw away any disposable item.

6. If the napkins are rented Little Lights, place napkins in a gray canvas tote bag found under the dishwasher counter, to the left of the dishwasher.

7. If the napkins are the couple's "Personal Item," place napkins in a white garbage bag found in a plastic drawer in the hallway between the Kitchen and Dinnerware Closet. Label white garbage bag "Dirty Napkins."

8. Bring glassware to the bar for the barback to hand wash.

9. Place bus tub with remaining dinnerware and flatware near the dishpit for the assigned staff members to clear and rinse (see "Doing the Dishes").

9. Return to the Main Hall with an empty bus tub and repeat until all dinnerware, flatware, napkins, empty glassware and other garbage have been cleared.

10. Once all dinnerware, flatware, napkins, empty glassware and other garbage have been cleared, ran through the dishwasher, and replaced to the Dinnerware Closet or bar, return to the Main Hall and begin bussing water goblets and other glassware.

11. Once the bus tub is full with water goblets and glassware, return to the Kitchen for the assigned staff member to dump and send through the dishwasher (see "Sending glassware/bar equipment through the dishwasher").

12. If guests are dancing on the Porch, you may wheel the black, two tiered cart into the Main Hall to bus place water goblets and glassware.

What does “done right” look like?

Many trips to the Main Hall are required to fully bus each table.

Disposables are thrown away before bus tub is sent to dish pit.

Dinnerware, flatware, and glassware have dishwasher priority over water goblets.

Little Light napkins are placed in gray canvas tote.

Couple's napkins are placed in a white garbage bag and are to be sent home with the couple at the end of the night.

Common problems or mistakes?

Bus tubs get heavy quick! Only fill it with what you can carry.

Do not send glassware through the dishwasher if dinnerware is being washed. Dinnerware has priority! Bring glassware to the bar for barback to hand wash. Glassware can go through the dishwasher once all dinnerware and flatware has been washed.
