What do you need to do the task?
Gray plate cart.
Guest count and type of dinnerware/flatware from Grid Sheet.
Step-By-Step
1. Using the Grid Sheet, determine the guest count and which chargers (if applicable), dinnerware (i.e. dinner and salad plate) and flatware (i.e. full set vs just fork and knife) will be used. Also determine whether the dinnerware will be set on the tables or left in the Catering Hall for the meal to be plated by the caterers.
2. Clear the area around the two wooden doors that are to the right of the white kitchen barn door.
3. Open the two wooden doors. Use the white barn door to keep the left door open, and find another object to keep the right wooden door open.
4. Pull the gray dinnerware cart through the two wooden doors, into the Dinnerware closet.
5. Pull the chargers from the top shelf (if applicable) and place them on the dinnerware cart, counting as you go.
6. Roll the dinnerware cart into the Main Hall and place one charger at each place at the table. Ensure that each charger is clean and not chipped.
7. Once all the chargers have been placed, repeat this process with the large dinner plates.
8. If the meal is to be plated, leave the dinner plates on the cart in the Catering Hall.
9. Once all the large dinner plates have been placed, repeat this process with salad plates (if applicable).
10. If the meal is to be plated, stack the salad plates nicely on the tables in the Catering Hall. Do not stack more than 20 salad plates.
11. Once the dinnerware has been placed, pull the gray cart into the Dinnerware Closet.
12. Pull the bins of requested flatware (i.e. full set vs just fork and knife) from the shelf and place it on the cart.
13. Roll the cart into the Main Hall.
14. Before placing flatware, put on disposable gloves from the kitchen. They are found on a shelf under the stainless steel tables in the middle of the kitchen on the side facing the fridge.
15. Place the dinner fork (large fork) on the left side of each plate or charger.
16. If applicable, place the salad fork (small fork) to the left of the dinner fork. Ensure that the bottoms of the forks are in line.
17. Place the knife on the right side of each plate or charger with the serrated edge facing in towards the plate.
18. If applicable, place the spoon to the right of the knife. Ensure that the bottoms of the knife and spoon are in line with each other and with the forks on the other side of the plate.
19. Once the dinnerware and flatware have been placed, return the flatware bins to their original location in the Dinnerware closet.
20. If smudges or hard water stains are visible, polish each flatware with a yellow microfiber cloth. These clothes are found in a drawer in the hallway between the kitchen and Dinnerware closet.
21. Pull the gray cart into the Dinnerware Closet through the empty doors and place the cardboard boxes, each filled with 12 water goblets, onto the cart.
22. Once the cart is full, but not overflowing, with boxes of water goblets, carefully roll the cart into the Main Hall.
23. Place the water goblets upside down an inch above the spoon (if applicable) or knife on the right side of the plate.
24. If all the water goblets from the cardboard boxes are placed and more water goblets are needed, bring the cart and empty cardboard boxes back into the Dinnerware Closet.
25. Refill the empty cardboard boxes with the water goblets that are stacked on the third shelf from the bottom.
26. Repeat steps 20-23 until all spots at each table has a water goblet.
27. Return the gray cart empty cardboard boxes back onto the shelf where they were originally obtained.
What does “done right” look like?
Each spot at the table has the correct dinnerware and silverware.
Silverware is placed vertically and their bottoms lined up with the other flatware.
Silverware is placed, from far left to far right, salad fork, dinner fork, knife, spoon.
Flatware is free from smudges, dried food, and hard water stains.
Common problems or mistakes?
Do not stack the dinnerware or water goblet boxes higher than the walls of the cart.
If flatware falls on the floor, please bring it to the dishwasher to be cleaned before used again.
Do not use flatware if there is dried on food. Instead, scrape off the dried food and place the flatware in the flatware holder next to the dishwasher or in the dish pit.

Be very careful when pulling the stacked water goblets. Some water goblets have uneven heights and can be knocked over very easily.
